Silo at CRATE Brewery || Douglas McMaster

One of the pioneers of the zero-waste movement, Douglas McMaster is moving his Silo restaurant from Brighton to the first floor of the CRATE Brewery White Building. With Silo he has taken what he learnt at some of the world’s top restaurants, such as Noma and St John, and created something entirely of his own. He will be applying his zero-waste ethos to everything at the new restaurant with a continually changing menu of seasonal dishes.

Daffodil Mulligan || Richard Corrigan

Richard Corrigan is one of the most successful Irish chefs in recent decades, having earned Michelin Stars at three different restaurants and been awarded London Restaurant of the Year four times in a career peppered with culinary accomplishments. His latest concept, the east London Irish eatery Daffodil Mulligan, will feature seasonal produce from Corrigan’s own country estate in Ireland, Virginia Park Lodge. The bar will serve a selection of craft beers and spirits and will focus on smaller Irish distilleries and producers.

Sussex || Richard, Oliver & Gregory Gladwin

Richard, Oliver and Gregory Gladwin’s latest British dining concept will be a celebration of the Sussex countryside with ingredients sourced directly from the family’s farm and vineyard, or local suppliers hand selected by the three brothers. Chef-patron Oliver Gladwin’s menu will include home-cured charcuterie, Sussex cheeses and wines served from a counter in the main dining room. For the mains, diners can expect dishes like roasted brill with Devon crab ravioli and sea herbs, vinewood-roasted grouse and rare venison, chard and black figs, or hare, quince and lovage Wellingtons.

Folie || Christophe Marleix

Folie invites diners to rediscover the food culture of the French Riviera in its elegant surroundings, which aim to revive the sensuality and glamour of the 1960s and 70s. Led by Executive Head Chef Christophe Marleix, the kitchen will draw inspiration from the Mediterranean. The humble recipes of the coastal coves of south of France and Italy provide the starting point for the restaurant’s fare.  Sharing platters will play a key role on the menu, with feasts like a whole confit lamb shoulder and basil baby potatoes; or a whole sea bass grilled in a charcoal oven served with a ratatouille, available to share.

Stoney Street || Alex Hely-Hutchinson & Henrietta Inman

Alex Hely-Hutchinson, founder of breakfast spot 26 Grains in Neal’s Yard, will open his latest concept with the help of chef Henrietta Inman at Borough Market this month. Breakfast highlights at the new eatery include a slow roasted tomato galette with tomato and chilli jam on fennel and coriander seed pastry, while lunch and dinner feature a host of delights from salads and fresh pasta to a bavette steak. A bakery counter will serve seasonal tarts and pastries and there will also be a hatch in the window serving coffees and pastries for take-away.
