Something Curated highlights five of the most exciting new and recently launched restaurants to try in New York this February, taking a closer look at the chefs and proprietors behind the promising food offerings.

Mokyo || Kyungmin Kay Hyun

Back in 2016, Kyungmin Kay Hyun opened her restaurant Thursday Kitchen, bringing together her Korean heritage and her love of Spanish tapas, creating small plates like paella with white tiger shrimp, saffron, and caramelised kimchi; and lamb meatballs in a marinara sauce spiced with gochugaru. With her new restaurant Mokyo, Hyun wants to show another side of her culinary background, a more refined approach that she developed while cooking for the likes of Jean-Georges Vongerichten and Nobu Matsuhisa.

Peter Beck, previously executive chef at Indian restaurants Chola, Tamarind, and, most recently, Imli, has taken over from Eric McCarthy, who left Paisley last autumn. For the restaurant’s refreshed menu, Beck is drawing from his experience working in New Delhi and Mumbai, as well as his knowledge of eastern and southern Indian cuisine. On offer, there is a Konkan fish curry, a popular dish from the western part of India, and a twist on a laksa, served with shrimp, calamari and coconut milk.

Kissaki || Mark Garcia & Evan Zagha

Kissaki, the latest project from the chef behind Astoria sushi bar Gaijin, moves into the former Amato Opera House space. Prior to helming the kitchen at Gaijin, Mark Garcia worked at leading Chicago Japanese restaurants Momotaro and Sushi Kaze. Garcia’s unconventional omakase dishes are complemented by kaiseki-style plates by chef Evan Zagha, who was previously at Brushstroke. On offer is a 16-dish tasting menu, which includes a back-and-forth between the omakase and kaiseki dishes served in an intimate setting.

Little Ways || Michael Hamilton & Ronnie Flynn

From the minds behind The Flower Shop, the newly opened Little Ways is a more sophisticated offering, comprising two levels designed by Akin Atelier. The interiors feature terrazzo, light wood and paintings that make it feel like something akin to a home. The kitchen is helmed by chef Michael Hamilton, and offers up dishes that traverse a multitude of cuisines. The menu includes tuna with butter beans, red onion, parsley and lemon, a cheese and pepper bucatini dish, as well as a chicken schnitzel, finished with tiramisu for pudding.

Torien || Yoshiteru Ikegawa

One of Japan’s most celebrated yakitori chefs sets-up shop in New York; Yoshiteru Ikegawa of Tokyo’s celebrated Torishiki restaurant opens his first site outside of Japan with Edo Lopez and his Shōwa Hospitality group. The stylish Soho eatery offers 24 seats, 16 of which are situated around a central counter. Guests can embark on a roughly 13-course tasting menu focused on all cuts of the bird, or tori.
