Xiringuito: The Restaurant On The Move
By Something CuratedPortable restaurant, Xiringuito (pronounced chi-rin-gito), opens this month in Margate, Kent. The delightful concept eatery is the brainchild of collaborators Conor Sheehan and chef Jackson Berg. The menu is inspired by the duo’s time working at London restaurants, including St John Bread & Wine and Bistrotheque. The restaurant’s name is taken from the Catalan term for the provisional, seasonal bars that open up on beaches during the summer months, referencing the transitional nature of the restaurant.
Xiringuito features a structure designed by award-winning architect Asif Khan with specially commissioned artwork by illustrator John Booth. The menu is comprised of internationally influenced British dishes inspired by Conor and Jackson’s shared experiences, making use of local and foraged produce.
Margate will be the first location for Xiringuito which has been specially designed to travel, allowing the restaurant to migrate with the seasons, seeking out interesting sites and fresh produce. With the restaurant’s coastal location, fish and sea vegetables will be prominent on the menu. At lunch the food offering will be more casual and will include Jackson’s take on the British seaside classic fish & chips; the evening a la carte will offer a wider choice with a changing selection of smaller plates.
