Palm Heights’ Singular Island Restaurant Tillies Arrives in New York City for Fashion Week
By Adam CoghlanFor the second consecutive year and building on a triumphant 2023 debut, celebrated island restaurant, Tillies from Palm Heights in Grand Cayman will arrive in New York City this week. The restaurant will be serve a family-style sharing menu from the 41st floor at WSA in FiDi for a six-day Fashion Week pop-up.
Tillies’ head chef Jake Brodsky has conceived a menu which sees some of the restaurant’s most celebrated dishes brought to a Manhattan audience for just the second time: A caviar service will be followed by a selection of seafood dishes, including the theatrical ‘seafood tower’ with oysters and ceviche, as well as tuna crudo, and scallop thermidor. Alongside those playful coastal plates will be a series of more robust brasserie-style classics, including fillet deluxe, oxtail terrine, and Caesar salad. A miso caramel baked Alaska is the dessert Fashion Week did not know it needed.
Tillies styles itself as “an homage to the very essence of classic seaside Caribbean grill, featuring fresh local produce, salads and dishes inspired the Greater Antilles region, its namesake.” In New York this Fashion Week, it will again bring some of that island culture to Manhattan’s most in vogue venue.
